Crunchy Bamboo, Asparagus Salad, Geoduck and Fruit Dressing
Serves 2
Ingredients
- 4 pieces green asparagus
- 3 - 4 pieces white asparagus
- 1 handful Japanese bamboo
- 1 geoduck, finely sliced
- Sea salt to taste
- Ice cubes for cooling down the asparagus after boiling
Dressing:
- 1 tsp raspberries
- 1 slice pineapple, finely diced
- 1 clove garlic, minced
- 1 tsp diced red onion
- 1/2 tsp honey
- 1 tsp sweet mustard
- Sea salt and freshly ground black pepper to taste
- 1/2 tsp whole grain mustard seeds
- 4 tsp extra virgin olive oil
Directions
1. Put all dressing ingredients except for the olive oil in a blender, and blend well for 1minute, adding olive oil slowly then chill the dressing.
2. In rapid boiling water, add salt and oil to boil the asparagus quickly for 2 minutes. Plunge them into ice cold water for cooling.
3. Toss asparagus and bamboo with dressing. Serve salad with geoduck.
