Crunchy Bamboo, Asparagus Salad, Geoduck and Fruit Dressing

 

Serves 2

Ingredients

  • 4 pieces green asparagus
  • 3 - 4 pieces white asparagus
  • 1 handful Japanese bamboo
  • 1 geoduck, finely sliced
  • Sea salt to taste
  • Ice cubes for cooling down the asparagus after boiling

Dressing:

  • 1 tsp raspberries
  • 1 slice pineapple, finely diced
  • 1 clove garlic, minced
  • 1 tsp diced red onion
  • 1/2 tsp honey
  • 1 tsp sweet mustard
  • Sea salt and freshly ground black pepper to taste
  • 1/2 tsp whole grain mustard seeds
  • 4 tsp extra virgin olive oil

Directions

1. Put all dressing ingredients except for the olive oil in a blender, and blend well for 1minute, adding olive oil slowly then chill the dressing.

2. In rapid boiling water, add salt and oil to boil the asparagus quickly for 2 minutes. Plunge them into ice cold water for cooling.

3. Toss asparagus and bamboo with dressing. Serve salad with geoduck.
