Geoduck Ceviche
Serves 4 as an appetizer
Ingredients
- 1 geoduck siphon
- 2 cups chopped tomato
- 1 cups Lime juice
- Cilantro to taste
- 1 cups chopped Cucumber
- 1 Onion, chopped
- Salt to taste
Directions
1. Cut geoduck into thin strips.
2. Add to bowl with chopped onion, cover with fresh squeezed lime juice and salt.
3. Let steep 3 to 4 hours. Drain and reserve liquid.
4. Add chopped tomato and cucumber.
5. Add reserved liquid to taste. Top with fresh cilantro.
